In the extra gear storage room here are my choices:

From brew one:

Pale ale: not a lot of hops nose or bitterness and to mu ch bubbles.  Used 2nd generation Northwest Ale from SS batch.   OG of 1056 ABV of 5.5

Brown:  By my recking best brew.  OG of 1050 ABV of 4.4Used 6 cups Amber dry malt extract.   Smooth tast with sharp multeyness like a brow ale should be little aftertaste of hop profile.

Brew Batch two:

Red Ale

8lbs pale malt, .5 lbs 50L crystal, .25 Munic, .5 carapils malt.  British Yeast #1098

OG 1070 ABV 8% Smell is sweet n fruitey but dry in taste.  Bottled over tow weeks ago and havn’t found a fully carbonated bottle yet.  So times I sip the red like wiskey.  Will store in beer celleur a couple more months.  Hey I looked up yeast 1098 and look:

Produces beers with a clean neutral finish allowing malt and hop character to dominate. Ferments dry & crisp, slightly tart, fruity and well balanced. Ferments well down to 65°F (18°C).

Origin:
Flocculation: Medium-High
Attenuation: 73-75%
Temperature Range: 64-72 F, 18-22C
Alcohol Tolerance: 10% ABV
 that explains the fruitness,  The low bubbles I justfyed because of the yeast alcohol tolerance being 10% and petering out.

Brew batch two B.

8lbs pale malt plus above by using SWING method, inter crock pot holds .5lbs 120L crystal, .5 rosted barley, .5 black malt.

FG 1054 ABV 5.9% So bottles are carbonated and tasted some are flater.  Looks like a stout I’m proude to brew.

A word about the britsh Wyeast smac packs.  Wyeast packages contain yeast for five gallons worth 5 billion cells.  I used on package for both MJ stout and Red Ale with complete attenuation.   I know all that time brewing bottling waitning to save seven bucks?  Called under pinching may cause phenolic compounds and Dimethyl Sulfide.  Because the wild yeast takes root before your 7 dollar smake pack.

Esters: Fruit like Banana like due to hight fermentation temps, wild yeast, excessive trub, high gravity wort, hight aeration of wort,high pitching rates.

Our beers need to me  aged because of hight gravity.  Also because to the price of hops and my foundness of hoppness I leave turb and hops in primary fermentor.  Haha take that.

Or $4.60 a gallon or 79cents a 22oz bottle! or 43cents a 12oz bottle

First batch in Jamie’s Kitchen

5 Gallons pale ale, and 7 gallons brown ale.

Used the SWIG method first time. Darn cool twice as much beer and same amount of work. Andrew had the 50qt cooler so we added 20 pounds grain 2 row demestic (10.95 *2), 2 pounds caramel 10 cystal (2.75), 1 pounds honey 25L (2.75). Here is my cleaver part in a clay croc pot I put 3/4# caramel 60 (2.65). By using the SWING method I could make two beers with one bed of grain. After collecting 5 gallons on wort post mash I removed the croc pot dumping the dark grains in the half spent ones.

We added about 6 gallons of 170 degree water and let her steep for 90 min. To get the 5 gallons of first running we added sparge water to back corner of cooler. Next we refilled the cooler with the hotter 170 water and started boiling first batch of wort. For the second running we had more wort then would fit in the kettle but ok.. because by then we had two kettles because the first batch was allreaddy yeasted.

@start .5 oz Columbus lose 17.2%AA (5.95 /4)

@45 min .5 oz Hallertauer pellets 3.9%AA (6.75/4)

@2 min .5 oz Cascade lose 6.0% AA (5.35/4)

Brown: Hard to hop like we wanted bacause we boiled in two pots. Pot1 started full pot two half full. As pot1 evaporated when add pot2 to pot1.

@Start pot1 .5oz Fuggle pellets 4.6%AA (6.75/4)

@30 min pot2 .5oz Fuggle pellets

about 1.5 hours to boil down wort to one pot.

@45 min pot1 .5oz fuggle pel.

@30 mon pot1 .5oz fuggle pell.

@2 min pot1 .5oz cascade whole

Pale FG 1.056

Brown 1.065 then 1.042 then 1.046 then 1.050 (we used snow to cool wort , I added to much vol. was afraid of watery brown so we added 2 cups boiled DME then 4 cups boiled DME (3lbs is 13.95).

All signs point to great beer from this batch!

I’m all done with the injections. Once I get the tubes removed from my chest this whole Cancer stuff will be a distant memory. I excited for a snowy Juneau winter. No more doctors only snow ice family and friends my future. Watch out I’m back to full strength, possibly more (No more hungry tumors!) by the end of 07!

I did round 9 last week and it almost kick my ass but I fought back and won.   For the first time I really thought I was going to blow chunks.  I really didn’t care if I puked I would have aimed for the sheets.

The “flush” factor has been building on me from round one.  At first it was kinda of a wired taste when the nurse flushes the pre-chemo drugs into my heart.  Now it’s built to oh god I going to puke feeling.  The part I stumped on is it the worst one my far is the benadrill flush witch for most people is ant-alergy medication.  Shit I’m never been allergies to any drugs or food but I’m thinking benadrill may be my first. I tryed sucking on hard candies…It work once but not last time.  I never be able to suck on a strawberry cream saver again. If I smoked cigs I would crush them up and hold them under my nose and I would never touch them again.  Rather expensive and unusal way to quit but effective.

Enough complaints I on the home stretch now.  Here I come Nov. 1st….. The last Chemo session.

I did round 8 on Sep. 7th. It went well. only 3 more sessions of Chemo, I can hardly wait.

I’m Back in Juneau after a week in Seattle.  Looks like some good news on the tumors melting.  Dr. Milder made it sound like they are well on there way out of my body.  I still have to complete the Chemo treatments but should be done by Christmas.   Only five more sessions left!

After the PET scan I felt almost as bad is after a round of Chemo.  For the scan they IV you up and inject radio active sugar in plus make you drink 1.5L of the make you shit stuff plus this contrast agent that makes you feel really warm thought out your body.   All this injecting and scaning is a lot more fun the first time.  Monday if left a bad taest in my mouth and reminded my to much of a Chemo session.
